Bartolotti's is a restaurant located on the first floor of the Erb Memorial Union. Its central location on campus and bar makes this a hot spot. Bartolotti’s often sees over 2,000 dollar days, making it a quick paced environment.
Grant Hubbell is the business’s longest tenured employee, in his 5 years there he has mastered the art of pizza making. Grant is a new father adjusting to fatherhood and back to his 9-5. Grant has told me that Bartolotti's brings much needed “stability” to his adult life.
Grant is seen popping the air bubbles of a pizza in the oven. The air bubbles occur as part of the fermentation process. There is a personal preference when it comes to bubbles on pizza, many prefer it while many others think it’s ugly.
A rare glimpse into the split second where the baking pizza can be seen. Bartolotti’s ovens cook upwards of 550 degrees. In general a pizza can be cooked in just 5 minutes at that temperature.
Throwing dough while not traditional can help form the pizza quickly and with style. It is believed that tossing dough originated from cooks trying to impress customers for more tips. The down side of tossing dough is that weak dough will easily split after the second throw.
